He missed an obvious one, at least for now.

Seattle to Portland or Portland to Seattle on either the Coast Starlight and/or one of the Amtrak Cascades.

The trip is an easy day trip, and you can also add a visit to destination city and still make it home in one day.

For now, the scenic highlight of the run is the trip along Puget Sound south of Tacoma (Also a possible endpoint for those coming from Portland) with amazing views of the fjord like Puget Sound and the Olympic Mountains.

Sadly, a plan is in the works to re-route the trains to a line that bypasses the scenic trip along the sound, instead offering a view of Interstate 5 and strip malls. The reason is a single track tunnel on the existing line that frequently backs up trains in both directions as they take turns passing through.
